Recipe for Nasi Goreng


Nasi Goreng:

Ingredients:
Boiled Rice long grained: 1/2 kg
Cooking Oil: 4-5 tbsp
Boneless chicken - diced 150 grams
Prawns deshelled: 100 grams
Onions 2 small finely chopped
Garlic 4 cloves finely chopped
Red chilies 4 ground
Soya Sauce 4-5 tbsp
Salt to taste
Pepper to taste
Fried Eggs for garnishing
Method:
Boil Rice and keep it aside. Heat oil in a pan and saute onion, garlic until golden brown. Add chicken and cook.  Sprinkle salt and pepper. When chicken is almost done add red chillies and then toss in the prawns. Stir fry for few minutes. Add the sweet soya sauce and mix the cooked rice. In another pan, make a double fried egg. Serve rice hot with a fried egg on top.


Moulded Rice with Chicken:

Method:
Take some butter in pan with some oil. Fry half the quantity of finely chopped onions and saute. Add chopped cashew nuts and fry for another 2-3 minutes. Now add boiled rice and fry. Now put rice in ring mould (greased). Leave it aside. Now add butter in pan and stir fry  rest of the onions, when it turns light brown add boneless chicken pieces and fry. When the chicken is somewhat done put red wine in it. Let it reduce. Add saffron dissolved in water. Meanwhile in another pan put butter, little maida and add chicken stock. Mix well. When it boils add chicken mixture and make thick gravy. season it with salt and pepper. Add fresh cream. In another pan saute mushrooms. tomato, diced onion and capsicum. Mix it with chicken and stir well. Now serve in a plate with rice. Garnish with potato crisps and tomato rounds.
Potato Crisps: Grate potato in cold water. After that drain water completely. Sprinkle cornflour mix well and fry.
