Hot Pepper Chicken:
Ingredients:
Boneless chicken diced - 200 gms
Salt- 5 gms
Sugar - a pinch
Egg yolk of 1 egg

Corn flour - 20 grams
Cooking Oil - 30 ml
Chopped garlic - 20 grams
Crushed Black pepper - 10 grams
Red Chili flakes - 5 grams
Butter 1/2 tsp (optional)
Chili oil - few drops
Spring Onions Chopped - 20 grams
Coriander leaves chopped - 10 grams
Rice wine - 10 ml (optional)
Cooking Oil - 30 ml

Butter 1/2 tsp (optional)

Spring Onions Chopped - 20 grams
Coriander leaves chopped - 10 grams

Method:
In a bowl mix together salt, sugar, egg yolk and corn flour. Marinate chicken pieces in this mixture for half an hour. Heat oil in the pan and deep fry the chicken pieces. Set aside. Heat some more oil in a wok and add garlic, black pepper, chili flakes and butter(if using). Sauté for 2 minutes and add the chicken, chili oil, spring onion, coriander leaves and rice wine (if using); else splash a few drops of water. Toss well to ensure it does not get burnt. Serve hot.
